Stuffed Cheesy Braided Turkish Kebab Bread Rolls#BreadBakers

This stuffed braided bread recipe is filled with Turkish Spiced Kebabs is absolutely delicious and impresses both with its glossy look and delightful taste. This simple and easy to make and you can serve this mouth watering rolls as snacks at any party.

Make 2 Rolls
Ingredients
For The Dough

150 Grams All Purpose Flour
3 Grams Instant Yeast
10 Grams Caster Sugar
½ Teaspoon Sea Salt
2o Grams Butter
¼ Cup Warm Milk
Warm water to knead as required
1 Beaten Egg - Reserve 1 Tablespoon for Egg wash
Ingredients For The Stuffing
2 Turkish Spiced Chicken Kebabs
Provolone Cheese as required
1 Tablespoon Parsley Leaves
1 Tablespoon Chopped Chives
1 Tablespoon Beaten Egg - for brushing the top

Method
Knead dough with warm water and leave it aside covered till double in volume.

When the dough has risen , take on the work surface and deflate it, cut the dough into 2 equal parts. Take one part and the rest keep covered. 
Roll it into a oval disc. 
Place the cheese in center, place the kebab and sprinkle the chives and parsley on top. With a pizza cutter cut the sides in equal strips on other sides.
Fold each side so they overlap each other (like a braid). Keep going, left to right and right to left till the end. 
When reach the end, leave a tail at the bottom, just for the appearance. Grease a tray and place your bread.
Then bake in preheated oven on 190°C for 20 minutes till it browns on the top.
Right after taking out of oven, brush it with oil or butter let it rest on the wire rack for 5 minutes then cover it in a cling film so that it does not dry out.
Enjoy this yummy bread.

Crispy Veg Heart Cutlet#SundayFunday

These are Restaurant Style cutlets, crisp, savory, golden, delicious and not oily. Kids as well as adults love this as snack or appetizer. There are so many ways to make them. These vegan vegetable cutlet are deep fried, you, can also shallow fry.

Ingredients
3 Boiled Potatoes - peeled & mashed
2 Medium Carrots - finely chopped
100 Grams French Beans - finely chopped
100 Grams Sweet Corn - finely chopped
50 Grams Green peas - finely chopped
1 Teaspoon Salt or to taste
1 Teaspoon Butter
1 Tablespoon Olive Oil
1Teaspoon Heaped Red Chilly Flakes
1 Teaspoon Oregano - crushed
1 Teaspoon Black Pepper Powder
½ Cup Fresh White Bread Crumbs
For The Slurry
2 -3 Tablespoon Corn Flour
2 -3 Tablespoon All Purpose Flour
Water - as required

Oil -  As Required For Deep Frying
To Serve
Tomato sauce

Method
In this cutlet recipe, I have used panko breadcrumbs to get a crispy texture. Regular breadcrumbs also work wonderfully.

In a pan heat a tablespoon each of oil and butter, then add chopped corn and green peas and high flame continuously keep stirring till all the moisture evaporates. Then add in chopped beans and carrot, and keep stirring on high flame till all the moistures evaporates and are soft. Remove this on to large plate and spread it so that it cools down completely. Once the veggies cool down then add in mashed potatoes, add in salt, chilly flakes, oregano, black pepper powder and massage them well, then add 1 tablespoon corn flour and 2 tablespoons heaped bread crumbs and mash it well till it forms a smooth ball. 
Divide this into small balls. Oil the heart shape mold and press the ball into it remove and arrange this on to a plate. Like wise make all the cutlets.  
Make a slurry of 1 tablespoon each corn flour and all purpose flour with a pinch of salt, add water little at at time to make a smooth and thin slurry.
Dip in the slurry and remove all the excess slurry, coat in bread crumbs . Make all like wise.
Heat oil in a deep frying pa and deep fry on medium high flame till golden and serve with ketchup.

Baked Chicken Fingers#BakingBloggers

These baked chicken fingers are so delicious, they are actually no dirty fingers, just mix and make. No,  breading, crumbing, mess, oil wastage or gluey fingers!


Ingredients
500 Grams Chicken Mince
1 Teaspoon Heaped Ginger Garlic paste
1 Teaspoon Cumin powder
1 Teaspoon Red Chilly powder or according to taste
3 Green chillies - finely chopped according to taste
3 Tablespoon Fresh Coriander- finely chopped
10 - 12 Mint Leave - finely chopped
1 Spring Onion / Scallion - finely chopped
1 Small Onion - finely chopped
3/4 Teaspoon level Salt or according to taste 
1 Tablespoon Lemon juice

Method 
I used breast and thigh meat to make the mince, this will make the chicken fingers juicy and soft.  
               
Add all the ingredients in chicken mince and mix well. Refrigerate for 20 to 30 minutes.
Take a kulfi/round ice cream stick, oil it and your hands lightly.
Take a ball and shape it around the stick to make long fingers. Then gently remove the fingers from the stick. Place them in oiled and foiled lined tray.
Bake them in preheated oven at 200°C , with both the elements on for 22 - 25 minutes. ( do no over cook or they will turn hard).
These are soo soooo good soft and juicy!

Surf and Turf With Shrimp and Sausage Skewers#FishFriday

This is a combo of seafood and sausage. While this marriage of surf and turf, is not new, this combo skewers is paired with Merlot, a perfect cozy dinner.

Ingredients
2 Large Cooked Pork Sausages - cut into thick slices
For the Shrimp Marination
250 Grams Jumbo Shrimps/Prawns- peeled, tails on
¼ Teaspoon Turmeric
1 Teaspoon Lemon Juice
1 Teaspoon Red chilly powder
¼ Teaspoon Garam Masala powder
¼ Teaspoon Shahjeera/Caraway seeds- coarsely ground
1 Big Clove Garlic - grated
Salt to taste
1 - 2 Tablespoons Oil

Method
Mix all the ingredients for the marination well, then add the shrimp, and toss to coat well. Leave it in the refrigerator for 15 - 20 minutes.
In the Meanwhile let's get the sausage ready
In a large saucepan bring the water to a boil. Add the sausage slice, cook over high flame for 5 minutes or till they plum. Drain and pat dry. Let cool.
Take a wooden skewer, skewer thread in the tail end of the shrimps and then tuck in the sausage and the other end of the shrimp, the sausage should be tightly tucked between the shrimp. Like the same way tuck in another shrimp and sausage. In one skewer tuck two shrimps only.
Using more skewers, repeat with the remaining shrimp and sausage till all are skewered.
Heat a grill a pan with oil and place the skewers on it and cook on high flame for exactly 3 minutes on each side ( if you cook for more time the shrimps will be rubbery and not juicy) turning once or twice, until charred spots appear. 
Serve immediately on a bed of lettuce.
How I enjoyed these skewers, took a lettuce leaf added a sausage and shrimps in it
made a parcel and enjoyed with sip of wine.
They were a perfect combo..  a tasty appetizer.

Chicken Donut Kebab Bagel Sandwich#Foodieextravaganza

This is a super delicious Chicken Donut Kebab Bagel Sandwich- loaded with veggies and cheese.

For the Chicken Donut Kebab
Ingredients

300 Grams Chicken Mince
1 Medium Onion - chopped
2 Medium Potatoes - peeled
2 Tablespoons Chana Dal
¼ Teaspoon Turmeric powder
1 Dried Kashmiri Red Chilly - broken into 4 pieces
2 " Piece Ginger - chopped
5 Big Clove Garlic - chopped
1 Small Egg
½ Teaspoon Garam Masala powder
4 Long Green Chilies - finely
10 - 15 Mint Leaves - chopped
3 Tablespoon Finely Chopped Coriander Leaves
A Juice of One Lemon

Method
                
In a pressure add the chopped ginger, garlic paste, salt, dal, dried red chilly, turmeric powder, onion.
Then add the chicken mince & potatoes, add a cup water. Take a whistle on high flame and then reduce the flame to low and cook for 5 - 7 minutes. Switch off the flame and let the cooker cool completely.
Open the cooker, if there is stock in the cooker 
Place it on medium high and let the stock dry off completely.
Cool, remove the potatoes and mash them with fork, or grate them and keep aside.
Take the rest of the chicken mixture and blend it the mixer jar to fine paste. Remove it into a bowl add the grated potatoes, lemon juice, garam masala, egg, green chilies, coriander & mint leaves, mix all ingredients very well. 
Refrigerate this batter for at least 2 hours. 
Shape them into a round shape, cut with doughnut cutter
Shallow or deep fry them on medium high flame ( I shallow fried them) till golden on both sides.
Drain on a kitchen towel. Serve and Enjoy.
Made Bagle Sandwich with this, for my hubby I made a veggie one but forgot to take a pic.
For the Sandwich
2 Bagels - Homemade
Mayonnaise - Homemade
2 Chicken Donut Kebabs
Lettuce Leaves
Tomato Slices
Cheese Slices
To Assemble the Sandwich 
Slice the bagle , apply mayonnaise on both sides, 
then place lettuce leaves, chicken donut kebab
tomato slices, again lettuce leaves, cheese slice.
Your Sandwich is ready!!
Enjoy!! This is a real treat and filling meal. A juicy kebab with a chewiness of the bagle..yum yum..
